The bread is the foundation of everything. Owner Zach Condron grew up in Reno, spent years working at Prema Farm, and started selling his sourdough alongside the farm's produce at local farmers markets — as much farmer as baker, as committed to ingredients as to craft. The list reads like a baker's manifesto: country sourdough, toasted sesame miso, olive loaf, salted lemon rosemary, einkorn, Japanese milk bread, rosemary sea salt focaccia, seeded rye, ciabatta. Everything made with 100% organic flour.

The pastry case, rewards careful attention — seasonal creations rotate and the croissants are made fresh daily. Coffee is locally sourced on a rotating basis, supporting a different roaster at a time. A Reno kid shaped by farmers markets and organic farms, who ran a beloved pizza operation before turning his full attention to bread. This is the new Reno.
